Bac Giang’s famous and crunchy specialty makes villagers change life

(BGO) – Ke rice cracker craft village is well known as an attractive destination in the northern province of Bac Giang. Now it has more chance to be promoted among foreign visitors when the province is going to host badminton competition at the 31st Southeast Asian Games (SEA Games 31) for the first time.

The craft village is located in Dinh Ke ward, Bac Giang city. The cracker making handicraft has been passed through generations for hundreds of years. Nguyen Xuan Truong, Director of Ke rice cracker cooperative said there are more than 100 households in the ward living on this craft.

Every day, Ke villagers wake up at 4am or even 1 am to start soaking rice to make the cracker. They select Khang Dan rice so as to make crunchy and delicious product. The rice is soaked about 30 minutes then grinded.

Ke rice cracker is made manually. Each household can make 300 to 1,000 pieces per day. Excluding the production cost, one family can earn daily revenue of 500,000 VND to one million VND.

Sesame and peanuts are coated both sides of a crunchy Ke cracker, leaving a tasty experience for anyone who tries a bite. Ke villagers use to make the crackers with two layers of batter at specific thickness.

Then they are carefully taken and put on large flat bamboo baskets for drying.

Once one side of the cake already dries, it must be flipped quickly to prevent it to stick to the basket surface or be cracked. Finished cakes are then stored.
